Acacia honey is light yellow in color, with a mild aroma and taste. It crystallizes very slowly and has the lowest glycemic index. Bees go to the acacia pasture in early May. Since it is very light and the most easily digestible honey, it is an excellent choice for young children. It is also used to calm the nervous system, reduce stress, and help with insomnia, nervousness, and tension. Heather or Erica is a Mediterranean plant that blooms in early spring, March/April. Since it is the first pasture of the year, we leave it in the hives until the acacia has finished blooming. We ferment it together with acacia as a unique flavor combination that is characteristic of Bodiš honey.
